RSVP is a seasonal restaurant rooted in the Connecticut countryside. We source from local farms, forage from nearby forests, and celebrate the simplicity of honest ingredients prepared with care. Our ever-changing prix-fixe menu reflects what the land offers each week.

Chef Bolivar Hilario’s RSVP opened in September 2026 in West Cornwall, Connecticut. A sixteen-seat BYOB restaurant, RSVP serves a multi-course tasting menu at a fixed price, with the menu changing weekly to reflect the best seasonal produce and wild foliage available each day.
Chef Bolivar’s menus are rooted in the work of local farmers and gardeners, with an emphasis on creating a place to gather, share a meal, and celebrate the community of Northwest Connecticut.
The Story of RSVP
RSVP originally opened in 2001 under the management of Charles Cilona and Chef Guy Birster and developed a devoted following over 24 years.
Charles and Guy never showed guests a menu or accepted credit cards. They encouraged guests to bring their own wine and share it around the table. A night at RSVP was meant to be warm and welcoming: a long, leisurely meal with thoughtful yet casual service.
That spirit continues today.
RSVP is BYOB, and we provide wine service along with pairing recommendations based on the current menu. Guests bringing mixed drinks are asked to bring them pre-mixed and portioned.
Cash is preferred, though personal checks are accepted. Accommodations can be made upon request. Bottled still and sparkling water, espresso, and tea are also available for purchase.
Dinner
RSVP is open Tuesday through Saturday for dinner, with a regular seating at 7:30 PM. On weekends and select busy nights, an additional 5:00 PM seating is available.
Reservations are required, and private dinners are available upon request.
